If you own a Sage espresso machine then you’re officially classified as a coffee aficionado. However, taking it to coffee pro status and re creating that home cafe status takes practise and understanding before you can master the art completely. One fundamental thing to understand how to correctly clean a sage coffee machine is that, a clean coffee machine equals delicious-tasting drinks. Giving your machine the TLC it deserves from day one will mean it’ll have a far longer life-span. You’ll notice inside your box there will be a sage cleaning manual for your specific model you purchased however, we’ve put together a list of the best Sage Tips & Tricks so that we can help you take your coffee making game to the next level. Your Sage machine talks to youDid you know that your Sage machine can talk to you? Sorry, we’re just kidding,..however for simplicity, your machine will actually let you know when it’s time for a clean. After producing 200 or so coffees the screen will show a ‘clean me’ alert. Follow these instructions to stay on top of the cleaning regime:
Portafilter Handle CleaningFrequency? Daily It’s always a good idea to rinse the portafilter after use with some hot water from the machine. If you have the luxury of your kitchen sink close by to the machine then try to get in the habit of using that rather than the machine. Why? The less water pulled through the machine means you’ll be saving money on filter replacements. Your machine will also last longer. Once every 2 weeks or so it’s worth doing a more thorough clean on the sage portafitler handles. Dissolve a cleaning tablet into a container filled with boiling water to soak these for 5 to 10 minutes. You can also add the shower screen if you’re able to remove it by carefully unscrewing it. Important note: Ensure when you soak the handles that you don’t submerge the handle itself into the solution as that can lead to discolouration and weakening of the material. Any standard de-tannin powder such as puly-caffe is a perfect solution to removing coffee build up. Back-flush CleaningFrequency? Daily We absolutely recommend a daily back-flush cleaning cycle for optimum flavour results. The group head is the location of the machine that collects the most coffee oils, grounds and harsh stale flavours. It really is as simple as, clean machine equals tasty espresso. You can purchase stiff coffee machine cleaning brushes (otherwise, you can use a bristly old toothbrush) to frequently give the head a clean to remove old coffee particles. Insert the blank cleaning disc into the single portafilter and lock this into the group head. Activate the single shot button, or manually turn button on and off to allow pressure to build up within the basket. Repeat this three times for 20-30 seconds each time to remove any residual coffee oils or grounds. Cleaning the Drip TrayFrequency? Daily Let’s be honest, the Sage drip tray is pretty small and fills up quickly. It’s to be expected for a machine that has such a fantastically small footprint. We’ve all over filled the drip tray and had to wobble our way across the kitchen floor to empty it whilst covering half the floor in the process. However, our best advice is to empty the drip tray more frequently to avoid this. Give everything connected to the drip tray a good rinse in soapy water and use a cloth to remove any coffee oils or build up. Changing the Water FilterFrequency? Every 2-3 months This is something you’re going to want to set yourself a reminder for as it’s one of the most important things you can do to ensure longevity for your sage machine. Limescale is the enemy of coffee machines, especially if you live in a hard water area such. In hard water areas such as London it’s a good idea to consider changing the filter a little more frequently to prevent limescale build up. Use your other household appliances as a good reference point for this. Does your kettle need de-scaling every other week? Well there’s a good chance your filter will need to be changed more frequently. If there is some notable scale build-up within the tank or externally on the machine by the hot water outlet then we recommend manually descaling the coffee machine. Steam Wand MaintenanceFrequency? Daily Steam wand maintenance is one of the last key things to clean when looking to learn how to clean a sage coffee machine. It’s great practise whenever steaming milk based drinks. to you always follow each steam by a purge and then wipe with a designated milk cloth. If you stick to this good habit you’ll never experience any issues with you Sage machine’s steam arm. Milk or milk alternatives are not great products when they are heated, so if you let milk harden on your steam wand you’ll be asking for trouble. Steam wands act as a vacuum and milk droplets will make their way inside your machine, going sour and blocking up the pipework if you aren’t careful. *If your steam wand is ever completely blocked after trying to descale the machine then you’ll need to contact Sage for further advice. They have a fantastic after-sales and warranty service too which is why we choose them as our machine partner. Milk Cloth TipsOur tip is to buy two different coloured micro-fibre cloths which are dedicated for cleaning. One of those (preferably black), will be used solely for cleaning the portafilter handle basket and sides to remove general oils and mess. The other (insert colour of your choice) will be dedicated to milk only and should never be cross contaminated with cleaning up coffee grounds. Why? If you use the coffee cloth to wipe the wand, it could result in coffee grounds being sucked up by your steam wand which acts as a vacuum. When using the micro-fibre cleaning cloth to wipe the steam wand, ensure the cloth is damp with hot water as it makes it much easier for keep the wand in clean condition. These answers will give you lots of information – from sustainable coffee to espresso machines to latte art and more. What’s the difference between light and dark roast coffee?You may have seen that there are different types of roasted coffee beans: these can range from light roast to dark roast. Other than the visual difference (dark roast beans are indeed darker in colour!), there are some key flavour differences too. Dark roast coffee beans have been roasted for longer, and have been heated to higher temperatures. Due to the breakdown of acids in the roasting process, they become denser and a more bitter flavour is produced. Depending on how you like your coffee, that more bitter flavour could be a pro or a con. In contrast, light roast coffee beans are roasted for less time, and therefore less of a bitter flavour is produced. We generally make light to medium roast coffee beans, simply because this method retains the natural sweetness and flavours from the original raw bean. What do I need to make great coffee at home?There are a couple of elements that we think are essential to making great coffee at home!
What does speciality-grade mean?As a progressive roaster focusing on quality we use the phrase ‘speciality coffee’ to mean coffees that have scored 80+ according to the Speciality Coffee Association and Coffee Quality Institute coffee grading standards. We look to purchase coffees that score of 82+ and in most cases 85+. From a taste point of view, there is a significant difference between a coffee that scores 80 and one that scores 85. Generally speaking, coffees that score higher have more complexity. Another reason why we buy speciality-grade coffee is because this allows coffee producers to earn a significant premium for the high quality coffee that they produce. Is caffeine bad for you?Like most things, caffeine is absolutely fine if consumed in moderation. However, there are a couple of side-effects if you do drink too much coffee. For example, you may have experienced a caffeine-induced energy crash. This can occur 25 minutes to a couple hours after you’ve consumed coffee or tea. It makes you feel extremely tired and sleepy, irritable, and unable to concentrate. Sometimes it can even feel a bit like a hangover due to nausea and headaches. We have a blog post about how to avoid energy crashes from coffee if this is something that you’d like to stop experiencing. We also have a great blog post all about caffeine, including more about its potential effects and how best to avoid them. What’s the best espresso machine to buy?First of all, you need to think about your budget. How much are you looking to spend on your new home espresso coffee machine? This goes beyond the price of the espresso machine itself, as it also includes anything you may need to buy on top. For example, if your new espresso machine does not come with a built-in grinder, and you don’t already have a good one, you will also need to add the cost of a grinder to your budget. Another incredibly important aspect to buying an espresso machine for your home is ensuring that the quality is top-notch. For that reason, we recommend the range of Sage home espresso machines. Or would you rather have the convenience of a latte at the push of a button? Don’t just think about the coffee-making, but also how easy the machine will be to clean as well. If you know that you’re not going to put in the time (and money) to properly clean a high-end espresso machine, then it’s probably best that you get something a bit simpler. What does single origin mean?Single origin coffees are coffees from a particular region, farm or area within a farm. One reason why you may prefer to drink a single origin coffee is because they are great at highlighting the unique flavours of a particular country or region. They’re similar to wine in that way. For example, Zimbabwean coffee tends to be medium-bodied with citrusy acidity and a woody and sweet flavour. Whereas coffee from Nicaragua has balanced sweetness with notes of chocolate and florals. If you really want to experience a country’s coffee in all of its glory, you’ll want to buy single origin coffee beans to taste it for its unique characteristics inherent to its location. For more helpful definitions, head to our coffee glossary! How do I know if a coffee is sustainable?Generally speaking, we define ‘ethical coffee’ as coffee that has been bought directly from farmers at a fair price. By fair, we mean a price that covers the cost of production and includes a healthy margin for the farmer. We also believe that ethical coffee is farmed in a way that respects the environment for future generations and promotes biodiversity. This may include coffee that has been organically grown (although we recognise that not all coffee producers will be able to afford an organic certification). If you’re going to buy coffee at a coffee shop, we always recommend going to local independent businesses rather than large chains. Small, independent coffee shops are more likely to have direct relationships with roasteries and coffee farms. They’re also more likely to answer any of your questions about where they source their beans. In terms of buying your own coffee beans, we recommend sources that are transparent about their ethical policies. Look on the coffee company’s website – do they have a dedicated page where they discuss their sustainable and ethical policies? Much like smaller coffee shops, smaller coffee roasteries are more likely to be involved with their supply chains and the farms their beans come from, and they’ll usually be able to answer questions about the farms they work with. What coffee should I choose?This is a very difficult question to answer! It’s really down to you and your coffee preferences. If you’re interested in experimenting with single origin coffees, we recommend looking closely at the flavour notes before you buy them. If you know that you like chocolate-y, fudge-y flavours, then try coffees which have those flavours You also need to think about what will work best with your brewing method of choice. Lightly roasted single origin beans work particularly well in filter coffees because they have more subtle flavours to be extracted. You can get the best flavours out of a single origin coffee by brewing them with something like a Hario V60 or a Chemex. Whereas using a single origin for espresso can be tricky because they are less versatile, and because they can get lost if you serve them in a milky drink such as a latte. Then you should begin with a basic design. Pour an espresso into the bottom of a round cup, and then adding a small amount of steamed milk. Swirl the espresso and milk together. Pour more of your milk slowly and evenly from fairly high, and then move the milk closer to the cup as you finish. There’s a magic window in espresso extraction somewhere between 20-32 seconds which gives you the perfect combo of acidity sweetness. Generally, the upper range between 25-32 results in great tasting espresso although, we wouldn’t recommend throwing away a shot at 23 seconds as that’s just a waste and it won’t taste awful. Having worked in the coffee machine world for over 10 years, our Founder James compares looking after your coffee machine just as you would your car (servicing it every 10-15k miles). We’ve included step by step instructions as well as a video how to guide to help you look after your machine properly. How often do you need to descale your machine?Thankfully, Sage have done the hard work. =Your machine should give you an automated prompt when it needs descaling.You’ll just need to ensure you have the appropriate descale cleaning powder. You can either purchase the official sage cleaner which is recommended because if there’s ever any warranty queries you’ll have been following manufacturers guidelines. Alternatively, a descaling solution for espresso machines will work well. Step by Step descale Instructions:1. Enter the menu on your display screen and scroll to descale (this will only appear if your machine needs to be descaled). Can I use vinegar to descale my sage coffee machine?This question is a perfectly valid one but it’s a resounding *no* from the Balance Coffee team. We’ve even consulted Sage to double check this online myth so we’re here to debunk it once and for all or good. We guessed you’d want to find out why so here it is…. Vinegar can damage the internal parts of a coffee machine, especially the seals and the rubber gaskets. It’s difficult to rinse and the smell and taste will remain within your espresso machine for a long time meaning you’ll have tainted your coffees with vinegar (no one wants vinegar con leché). Why do you need to descale a coffee machine?Coffee machines are generally designed to pretty straightforward however, they contain lots of small parts with small holes and tubes helping to circulate and heat the water from ambient temperature to hot enough to brew your morning espresso shot. This is where it can start to be problematic… Particularly in hard water areas of the UK such as London, water is extremely hard and equipment and kettles become ideal targets for limescale build up. When you heat water, it begins to produce a chalky substance and bits of debris – not what you want floating in your coffee machine.
